Taco Pasta Salad

I made this one night when I was making dinner for my family and realized I didn’t have anything to eat, as I am a vegetarian. So I quickly threw this meal together with what I had on hand in my kitchen.

What you will need:

Noodles – 1 and half cups
Tomatoes – 1
Onions – 1
Salsa – 1 cup or more if you like more
Ranch Salad Dressing – half cup
Taco Seasoning – 1 packet
Cheese – however much you like
Nachos – however much you like
Beans – 1 can
Corn – 1 and half cups
Lemon or Lime  – 1

First boil the noodles. I used one and a half cups.

While noodles are cooking prep the corn (1 and half cups), and beans ( I used half a tin of black beans and red kidney beans), and cut up the onion, and tomato.

For the “sauce” I used half a cup of Kraft Ranch dressing, a whole lemon squeezed and a packet of taco season. Mix together until no seasoning is completely mixed in.

Drain the noodles. Mix everything together. And then I added in a cup of salsa.

Cool in fridge.

When ready to serve grate up cheese to desired amount and crush up nacho chips to add on top.

3 Years Strong

One day I came up with the great idea to stop eating meat for the week. That was 3 years ago. 3 years ago today actually.

Fish are friends

I would love to say that I stopped eating meat because of animal rights or some cool thing like that, but the truth is that I stopped because I realized I felt better when I didn’t eat it, I slept better, I had more energy, I got sick less often.

However it hasn’t been all rainbows and sunshine, being the only vegetarian in the house can be a pain sometimes. Having to cook two separate meals can be annoying. I admit, some nights I’m so tired that after cooking a chicken meal for the family I am left eating a grilled cheese or something. I have even done meal planning, and go shopping, and totally forget to come up with a second meal for myself, again grilled cheese to the rescue!

This is probably the part when you are waiting for me to drop some wisdom about all the wonderful things I have learned in the last 3 years on this vegetarian journey, so here it goes: Kale is yummy.
Yup, that is about it. Sorry. I loved all fruits and vegetables before this, and would rather eat a salad any day, but with that being said, I still never tried Kale before this. I put Kale in my fruit smoothies, veggie stir fry, chilli, and salads. I have yet to try Kale chips.

One question I always get asked is when will I eat meat again? Honestly I have no idea. I never set out to stop eating meat completely, and honestly sometimes when I am BBQing steak for the family, it can be hard to resist.
For now I will continue to BBQ my veggies while the family enjoys steak. Lucky me.
